Ingredients

  • 2 cups gingerbread cookie crumbs
  • 4 tbsp melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/4 tsp nutmeg
  • 1 cup sour cream


Instructions

  1. Preheat oven to 325°F (165°C).
  2. Mix gingerbread crumbs and melted butter, press into a 9-inch springform pan.
  3. Bake crust for 10 minutes, then cool.
  4. Beat cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each.
  6. Mix in vanilla, ginger, cinnamon, cloves, and nutmeg.
  7. Fold in sour cream.
  8. Pour filling over crust, smooth top.
  9. Bake 50-60 minutes until center is set.
  10. Cool in oven with door ajar, then refrigerate for 4 hours.
