A rich and creamy gingerbread cheesecake with a spiced crust, perfect for the holiday season.
Ingredients
- 2 cups gingerbread cookie crumbs
- 4 tbsp melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1 tsp ground ginger
- 1/2 tsp ground cinnamon
- 1/4 tsp ground cloves
- 1/4 tsp nutmeg
- 1 cup sour cream
Instructions
- Preheat oven to 325°F (165°C).
- Mix gingerbread crumbs and melted butter, press into a 9-inch springform pan.
- Bake crust for 10 minutes, then cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well after each.
- Mix in vanilla, ginger, cinnamon, cloves, and nutmeg.
- Fold in sour cream.
- Pour filling over crust, smooth top.
- Bake 50-60 minutes until center is set.
- Cool in oven with door ajar, then refrigerate for 4 hours.
Notes
- Let cream cheese soften at room temperature for easier mixing.
- Use a water bath for a crack-free cheesecake.
