Ingredients

  • 1 cup gluten-free flour blend
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup milk (dairy or plant-based)
  • 1 egg
  • 1 tbsp melted butter or oil
  • 1/2 cup fresh blueberries


Instructions

  1. Mix dry ingredients in a bowl.
  2. Whisk milk, egg, and melted butter in another bowl.
  3. Combine wet and dry ingredients until just mixed.
  4. Gently fold in blueberries.
  5. Heat a skillet over medium heat and lightly grease.
  6. Pour 1/4 cup batter per pancake and cook until bubbles form.
  7. Flip and cook until golden brown.
