Ingredients
- 1 cup gluten-free flour blend
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup milk (dairy or plant-based)
- 1 egg
- 1 tbsp melted butter or oil
- 1/2 cup fresh blueberries
Instructions
- Mix dry ingredients in a bowl.
- Whisk milk, egg, and melted butter in another bowl.
- Combine wet and dry ingredients until just mixed.
- Gently fold in blueberries.
- Heat a skillet over medium heat and lightly grease.
- Pour 1/4 cup batter per pancake and cook until bubbles form.
- Flip and cook until golden brown.
