Description

These Healthy Oat Crepes are light, nutritious, and naturally gluten-free! Made with blended oats, eggs, and a touch of honey, they’re perfect for a wholesome breakfast or snack.


Ingredients

Crepe Batter

  • 1 cup rolled oats (blended into oat flour)
  • 2 eggs (large)
  • 1/2 cup milk (or dairy-free alternative)
  • 1 tsp vanilla extract (for flavor)
  • 1 tbsp honey (or maple syrup)
  • 1/4 tsp salt (for balance)


Instructions

  1. Blend the rolled oats into a fine flour using a blender.
  2. Add eggs, milk, vanilla extract, honey, and salt to the blender. Blend until smooth.
  3. Heat a non-stick pan over medium heat and lightly grease with oil or butter.
  4. Pour a small amount of batter into the pan, swirling to spread evenly.
  5. Cook for about 1-2 minutes until edges lift, then flip and cook another minute.
  6. Repeat with remaining batter. Serve warm with fruit, yogurt, or honey!

Notes

These crepes store well in the fridge for up to 3 days or can be frozen for quick breakfasts.
