Delicious and healthy baked pumpkin donut holes packed with warm spices and natural sweetness. Perfect for a guilt-free treat.
Ingredients
- 1 cup whole wheat flour
- 1/2 cup pumpkin puree
- 1/4 cup maple syrup
- 1 egg
- 1 tbsp coconut oil, melted
- 1 tsp vanilla extract
- 1 tsp pumpkin pie spice
- 1/2 tsp baking powder
- 1/4 tsp salt
Instructions
- Preheat oven to 350°F (175°C). Grease a mini muffin tin.
- Mix all dry ingredients in a bowl.
- In another bowl, whisk wet ingredients together.
- Combine wet and dry ingredients until just mixed.
- Scoop batter into the prepared tin, filling each cavity 3/4 full.
- Bake for 10-12 minutes until a toothpick comes out clean.
- Let cool for 5 minutes before removing from tin.
Notes
- Store in an airtight container for up to 3 days.
- For extra flavor, roll warm donut holes in cinnamon sugar.
- You can substitute honey for maple syrup.
