  • 1 cup pumpkin puree
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease a muffin tin or use liners.
  2. In a bowl, mix pumpkin puree, eggs, honey, maple syrup, coconut oil, and vanilla.
  3. In another bowl, whisk flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Divide batter into muffin cups. Bake for 20-25 minutes or until a toothpick comes out clean.
  6. Cool for 5 minutes before serving.
