A quick and satisfying high-protein chickpea curry bowl made with simple ingredients.
Ingredients
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 can (14 oz) diced tomatoes
- 1 cup coconut milk
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 tsp ground cumin
- 1/2 tsp turmeric
- 1/2 tsp salt
- 2 cups cooked brown rice
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pan over medium heat.
- Add onion and garlic. Cook until soft.
- Stir in curry powder, cumin, and turmeric. Cook for 1 minute.
- Add chickpeas, diced tomatoes, coconut milk, and salt. Bring to a simmer.
- Cook for 15 minutes, stirring occasionally.
- Serve over cooked brown rice.
Notes
- You can use light coconut milk to reduce fat.
- Add spinach for extra nutrients.
