Ingredients

  • 2 cups chicken breast, diced
  • 1 cup quinoa, rinsed
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 onion, diced
  • 4 cups chicken broth
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Sauté for 5 minutes.
  3. Add diced chicken and cook until no longer pink.
  4. Stir in quinoa, chicken broth, garlic powder, salt, pepper, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Let cool before dividing into meal prep containers.

Notes

  • Store in airtight containers for up to 5 days.
  • Reheat on the stove or in the microwave.
