Ingredients
- 2 cups chicken breast, diced
- 1 cup quinoa, rinsed
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 onion, diced
- 4 cups chicken broth
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Sauté for 5 minutes.
- Add diced chicken and cook until no longer pink.
- Stir in quinoa, chicken broth, garlic powder, salt, pepper, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Let cool before dividing into meal prep containers.
Notes
- Store in airtight containers for up to 5 days.
- Reheat on the stove or in the microwave.
