Ingredients
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup mashed sweet potatoes
- 1/3 cup honey
- 1/4 cup melted butter
- 1 egg
- 1 cup milk
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish.
- In a bowl, mix cornmeal, flour, baking powder, and salt.
- In another bowl, combine mashed sweet potatoes, honey, melted butter, egg, and milk.
- Add wet ingredients to dry ingredients. Stir until just combined.
- Pour batter into the prepared dish. Bake for 20-25 minutes.
- Brush with honey butter while warm. Serve.
