This Honey Lime Chicken & Avocado Rice Stack is packed with juicy chicken, creamy avocado, and citrusy zing—all stacked on fluffy jasmine rice.
Ingredients
1 lb boneless skinless chicken breast or thighs, diced
2 tbsp olive oil
2 tbsp honey
1 lime (juice and zest)
2 cloves garlic, minced
Salt and pepper to taste
2 cups cooked jasmine or basmati rice
1 large avocado, diced
1/4 cup chopped cilantro
1/4 cup finely diced red onion
Juice of 1/2 lime
Salt to taste
Optional: lime wedges, honey drizzle, sliced jalapeños
Instructions
1. Combine chicken, olive oil, honey, lime juice/zest, garlic, salt, and pepper in a bowl. Marinate 20 mins–24 hrs.
2. Heat a skillet and cook chicken 7–9 minutes until browned and cooked through.
3. In a separate bowl, mix avocado, red onion, cilantro, lime juice, and salt.
4. Layer rice in serving bowls. Top with cooked chicken and avocado mixture.
5. Garnish with optional toppings like lime wedges, jalapeños, or honey drizzle.
Notes
Best served fresh but can be prepped ahead. For meal prep, store ingredients separately and assemble before serving.
