Ingredients
1 cup low-fat cottage cheese
1 tablespoon maple syrup
2 tablespoons pineapple juice
¼ teaspoon vanilla extract
¼ teaspoon ground cinnamon
1 pinch ground nutmeg
1 pinch ground allspice
2 ounces pineapple chunks, drained
1 banana, sliced
3 tablespoons toasted pecans, chopped
¼ cup unsweetened coconut, toasted (optional)
Instructions
1. Mix cottage cheese, maple syrup, pineapple juice, vanilla, cinnamon, nutmeg, and allspice in a bowl.
2. Blend for a smoother base if preferred.
3. Divide mixture evenly into two serving bowls.
4. Top with banana slices, pineapple chunks, and pecans.
