Description

Fluffy, low-carb Keto Cottage Cheese Cloud Bread perfect for sandwiches or sweet treats on a keto diet.


Ingredients

6 large eggs, separated, room temperature

1/2 teaspoon white vinegar or cream of tartar

4 ounces cottage cheese (113 grams)

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup whey protein powder (62 grams)

1/4 cup egg white protein powder (20 grams)

1 tbsp Allulose (optional)

1/2 tsp garlic powder & onion powder (optional)

1 tsp vanilla stevia (optional)

Sesame seeds or bagel seasoning (optional)


Instructions

1. Preheat oven to 300°F. Line baking sheet with parchment paper.

2. Separate egg whites and yolks. Place whites in a large bowl.

3. Add vinegar to whites. Whip to stiff peaks.

4. In another bowl, blend yolks, cottage cheese, baking powder, salt, and protein powders until smooth.

5. Fold whipped whites into yolk mixture in batches.

6. Spoon mixture onto prepared sheet in rounds or flat rectangle.

7. Top with seasoning if desired.

8. Bake 25–30 minutes until golden. Cool before serving.

Notes

For a sweeter version, add vanilla stevia and serve with berries. For savory, add garlic and onion powder and use as sandwich bread.
