Ingredients
- 1 cup fresh spinach
- 2 ripe bananas
- 1 cup whole wheat flour
- 1/2 cup rolled oats
- 1/4 cup honey
- 1/4 cup milk
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
Instructions
- Preheat oven to 350°F (175°C). Grease a muffin tin or use liners.
- Blend spinach, bananas, honey, milk, egg, and vanilla until smooth.
- In a bowl, mix flour, oats, baking powder, and cinnamon.
- Pour wet ingredients into dry ingredients. Stir until combined.
- Fold in melted coconut oil.
- Divide batter into muffin cups, filling each 2/3 full.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Cool for 5 minutes before serving.
Notes
- Use frozen spinach if fresh is not available—thaw and drain excess water.
- Swap honey with maple syrup for a vegan option.
- Store in an airtight container for up to 3 days.
