Ingredients
- 1 cup mashed sweet potato
- 1 cup rolled oats
- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1/2 teaspoon cinnamon
- 1/4 teaspoon vanilla extract
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix mashed sweet potato, almond butter, honey, cinnamon, and vanilla extract.
- Stir in rolled oats and chocolate chips if using.
- Scoop tablespoon-sized portions onto the baking sheet. Flatten slightly with a spoon.
- Bake for 12-15 minutes until firm. Let cool before serving.
Notes
- Store in an airtight container for up to 5 days.
- Replace almond butter with peanut butter if preferred.
- For a nut-free option, use sunflower seed butter.
