Description

Sweet, citrusy, and just the right amount of crumbly—these bars taste like sunshine you can eat!

Ingredients

For the crust & crumb

  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup cold unsalted butter (cubed)
  • 1 egg (beaten)

For the filling

  • 14 oz sweetened condensed milk
  • 1/4 cup lemon juice (freshly squeezed is best)
  • 1 tsp lemon zest

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, salt, and sugar. Cut in cold butter until mixture becomes crumbly. Stir in the beaten egg.
  3. Press 2/3 of the crumb mixture into the bottom of the prepared pan.
  4. In another bowl, mix sweetened condensed milk, lemon juice, and zest. Pour this mixture over the crust.
  5. Sprinkle the remaining crumb mixture on top.
  6. Bake for 25–30 minutes, or until the top is golden and the center is set. Cool completely before slicing.

Notes

These bars are perfect chilled! Store in the fridge for an extra refreshing citrusy treat.
