Description

Ingredients

  • 1 medium acorn squash, halved and seeded
  • 2 tbsp maple syrup
  • 1 tbsp olive oil
  • 1/4 cup pecans, chopped
  • 2 tbsp dried cranberries
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the acorn squash in half and remove seeds.
  3. Brush the squash with olive oil and season with salt and pepper.
  4. Place squash cut-side down on a baking sheet and roast for 25 minutes.
  5. Flip the squash, drizzle with maple syrup, and sprinkle with cinnamon.
  6. Top with pecans and cranberries.
  7. Roast for another 15 minutes until caramelized and tender.
  8. Serve warm.
