Ingredients
- 1 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 2 tsp vanilla extract
- 1/2 cup milk
- Blue and green food coloring
- 1 cup rainbow sprinkles
- 1 batch vanilla frosting
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Whisk flour, baking powder, and salt in a bowl.
- Cream butter and sugar until fluffy. Beat in eggs one at a time, then add vanilla.
- Alternate adding dry ingredients and milk, mixing until smooth.
- Divide batter into two bowls. Tint one blue and one green.
- Spoon colored batter into liners, swirling gently. Bake for 18-20 minutes.
- Cool completely before frosting. Top with sprinkles.
