Description

Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 jalapeño, minced
  • 1/2 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp mayonnaise
  • 2 tbsp sour cream
  • 1 lime, juiced
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup crumbled cotija cheese


Instructions

  1. Cook corn kernels (if frozen) and let cool.
  2. In a large bowl, mix corn, bell pepper, jalapeño, red onion, and cilantro.
  3. In a small bowl, whisk mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Pour dressing over the salad and toss to coat evenly.
  5. Sprinkle cotija cheese on top before serving.
