Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mayonnaise
- 1/2 cup sour cream
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 clove garlic, minced
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 1/2 cup crumbled cotija cheese
- 2 ears corn, grilled and kernels removed
- Salt and pepper to taste
Instructions
- Preheat grill to medium-high heat.
- Season chicken breasts with salt and pepper.
- Grill chicken for 6-7 minutes per side until cooked through.
- In a bowl, mix mayonnaise, sour cream, chili powder, smoked paprika, garlic, lime juice, and cilantro.
- Brush the sauce over grilled chicken.
- Sprinkle with cotija cheese and grilled corn kernels.
- Serve immediately.
