Creamy, refreshing, protein-rich mint chocolate chip cottage cheese ice cream you can make in minutes no ice cream maker needed.
Ingredients
1 ½ cups cottage cheese
⅓ cup maple syrup
1 teaspoon vanilla extract
¼ teaspoon peppermint extract
⅓ cup chocolate chips
2 pinches salt
Instructions
1. Blend cottage cheese, maple syrup, vanilla, peppermint, and salt until smooth.
2. Stir in chocolate chips.
3. Pour mixture into a freezer-safe container.
4. Freeze for 2–4 hours.
5. Let sit at room temp 5–10 mins before scooping.
6. Enjoy!
Notes
For best texture, use full-fat cottage cheese.
Optional: add green food coloring for traditional mint look.
