Ingredients
- 2 cups all-purpose flour
- 1 cup shredded coconut
- 1 cup sugar
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup coconut milk
- 1/2 cup water
- 1/4 cup melted butter
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flour, shredded coconut, sugar, baking powder, and salt in a bowl.
- In another bowl, whisk coconut milk, water, melted butter, eggs, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 50-55 minutes.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 3 days.
- Toast slices for extra crunch.
- Substitute coconut oil for butter if desired.
