  • 2 cups all-purpose flour
  • 1 cup shredded coconut
  • 1 cup sugar
  • 1 tsp baking powder

  • 1/2 cup coconut milk
  • 1/2 cup water
  • 1/4 cup melted butter
  • 2 eggs
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix flour, shredded coconut, sugar, baking powder, and salt in a bowl.
  3. In another bowl, whisk coconut milk, water, melted butter, eggs, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
