Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 16 oz mushrooms, sliced
  • 1 tsp paprika
  • 1 tsp Dijon mustard
  • 1 cup vegetable broth
  • 1/2 cup sour cream
  • 1 tbsp flour
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 8 oz egg noodles, cooked


Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and garlic, cook until soft.
  3. Add mushrooms and cook until they release their juices.
  4. Stir in paprika and Dijon mustard.
  5. Pour in vegetable broth and simmer for 5 minutes.
  6. Mix flour with sour cream and stir into the pan.
  7. Cook until sauce thickens, then season with salt and pepper.
