Description

A creamy no-churn strawberry cheesecake ice cream with fresh strawberries and a graham cracker swirl. No ice cream maker needed.


Ingredients

  • 2 cups fresh strawberries, hulled and chopped
  • 1/4 cup granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 tsp vanilla extract
  • 2 cups heavy cream, chilled
  • 8 oz cream cheese, softened
  • 1 cup crushed graham crackers
  • 2 tbsp melted butter


Instructions

  1. Mix strawberries and sugar in a bowl. Let sit for 30 minutes.
  2. Blend strawberries until smooth.
  3. Beat cream cheese until smooth. Add condensed milk and vanilla. Mix well.
  4. In a separate bowl, whip heavy cream to stiff peaks.
  5. Fold whipped cream into cream cheese mixture.
  6. Combine crushed graham crackers with melted butter.
  7. Layer ice cream mixture, strawberry puree, and graham cracker crumbs in a loaf pan.
  8. Freeze for at least 6 hours.

  • Use full-fat cream cheese for best texture.
