Description
A simple and delicious one-pot dish featuring tender chicken, earthy mushrooms, and creamy orzo pasta.
Ingredients
- 1 lb chicken breast, diced
- 8 oz mushrooms, sliced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat
- Add diced chicken and cook until browned
- Add onions and garlic, sauté until softened
- Stir in mushrooms and cook for 3 minutes
- Add orzo and toast for 1 minute
- Pour in chicken broth and bring to a simmer
- Cover and cook for 10 minutes, stirring occasionally
- Stir in heavy cream and thyme
- Cook for 2 more minutes until creamy
- Season with salt and pepper before serving
Notes
- Substitute vegetable broth for vegetarian version
- Add spinach at the end for extra greens
- Leftovers keep well refrigerated for 3 days
