Description
A hearty and easy-to-make lasagna soup with all the flavors of traditional lasagna in a comforting bowl.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken broth
- 1 can (8 oz) tomato sauce
- 1 tsp dried basil
- 1 tsp dried oregano
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add onion and garlic, cooking until softened.
- Stir in crushed tomatoes, tomato sauce, chicken broth, basil, and oregano.
- Bring to a boil, then add broken lasagna noodles.
- Reduce heat and simmer for 15-20 minutes until noodles are tender.
- Season with salt and pepper.
- Serve topped with ricotta and mozzarella cheese.
Notes
- Use ground turkey for a lighter version.
- Add spinach for extra greens.
- Store leftovers in an airtight container for up to 3 days.
