Ingredients
Main Ingredients
- 12 oz pasta (penne, linguine, or spaghetti)
- 1 small zucchini (sliced)
- 1 red bell pepper (chopped)
- 1 cup cherry tomatoes (halved)
- 1 cup broccoli florets
- 3 cloves garlic (minced)
- 4 cups vegetable broth
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
Optional Ingredients
- 1/2 cup Parmesan cheese (grated)
- fresh basil (for garnish)
Instructions
- In a large pot, combine pasta, zucchini, bell pepper, tomatoes, broccoli, garlic, vegetable broth, olive oil, Italian seasoning, salt, and pepper.
- Bring to a boil over medium-high heat.
- Stir occasionally and cook uncovered until pasta is al dente and most of the liquid is absorbed, about 10–12 minutes.
- Stir in Parmesan if using. Garnish with fresh basil and serve immediately!
Notes
Feel free to swap in your favorite seasonal veggies or add some red pepper flakes for a spicy kick!
