Description
A hearty and nutritious dish featuring acorn squash stuffed with quinoa, apples, and sage.
Ingredients
- 2 acorn squash
- 1 cup quinoa
- 2 cups vegetable broth
- 1 apple, diced
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp fresh sage, chopped
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Cut squash in half and remove seeds.
- Brush with olive oil and roast cut-side down for 30 minutes.
- Cook quinoa in vegetable broth according to package instructions.
- Sauté onion, garlic, and apple in olive oil until soft.
- Mix cooked quinoa, sautéed mixture, and sage.
- Stuff squash halves with quinoa mixture.
- Return to oven for 10 minutes.

- Use tart apples like Granny Smith for best flavor.
- Can substitute vegetable broth with water if needed.
- For extra crunch, add toasted walnuts.
