Description

A hearty and nutritious dish featuring acorn squash stuffed with quinoa, apples, and sage.


Ingredients

  • 2 acorn squash
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 apple, diced
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp fresh sage, chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F.
  2. Cut squash in half and remove seeds.
  3. Brush with olive oil and roast cut-side down for 30 minutes.
  4. Cook quinoa in vegetable broth according to package instructions.
  5. Sauté onion, garlic, and apple in olive oil until soft.
  6. Mix cooked quinoa, sautéed mixture, and sage.
  7. Stuff squash halves with quinoa mixture.
  8. Return to oven for 10 minutes.
