Description
A fresh and nutritious quinoa salad with feta cheese and mixed vegetables.
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, finely chopped
- 1/2 cup crumbled feta cheese
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- Cook quinoa in boiling water for 15 minutes.
- Let quinoa cool.
- Mix diced cucumber, bell pepper, and red onion in a bowl.
- Add cooled quinoa to the vegetables.
- Top with crumbled feta cheese.
- Drizzle olive oil and lemon juice over the salad.
- Season with salt and pepper.
- Toss gently and serve.
Notes
- Store leftovers in the fridge for up to 3 days.
- Add avocado for extra creaminess.
- Use cherry tomatoes for more color.
