Description
A crisp and refreshing salad combining radishes and cucumbers for a light and healthy side dish.
Ingredients
- 1 cup sliced radishes
- 1 cup sliced cucumbers
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp chopped fresh dill
Instructions
- Wash and slice the radishes and cucumbers.
- In a bowl, combine olive oil, lemon juice, salt, and black pepper.
- Toss the sliced radishes and cucumbers in the dressing.
- Sprinkle with fresh dill and mix well.
- Serve chilled.
Notes
- For extra crunch, add thinly sliced red onion.
- Adjust salt and pepper to taste.
- Best served fresh but can be refrigerated for up to 2 hours.
