Description

A delicious and easy dessert featuring a tangy rhubarb filling topped with a crunchy oat crumble.


Ingredients

  • 2 cups chopped rhubarb
  • 1/2 cup granulated sugar
  • 1 tbsp cornstarch
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/2 cup melted butter


Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix rhubarb, granulated sugar, and cornstarch in a bowl.
  3. Combine flour, oats, brown sugar, and cinnamon in another bowl.
  4. Add melted butter to dry ingredients and mix until crumbly.
  5. Press half the oat mixture into a greased baking dish.
  6. Spread rhubarb mixture over the base.
  7. Sprinkle remaining oat mixture on top.
  8. Bake for 35-40 minutes until golden brown.
  9. Cool before cutting into bars.

Notes

  • Use fresh rhubarb for best results.
  • Can substitute half the rhubarb with strawberries.
  • Store in an airtight container for up to 3 days.
