Description
A delicious and easy dessert featuring a tangy rhubarb filling topped with a crunchy oat crumble.
Ingredients
- 2 cups chopped rhubarb
- 1/2 cup granulated sugar
- 1 tbsp cornstarch
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup brown sugar
- 1/2 tsp cinnamon
- 1/2 cup melted butter
Instructions
- Preheat oven to 350°F (175°C).
- Mix rhubarb, granulated sugar, and cornstarch in a bowl.
- Combine flour, oats, brown sugar, and cinnamon in another bowl.
- Add melted butter to dry ingredients and mix until crumbly.
- Press half the oat mixture into a greased baking dish.
- Spread rhubarb mixture over the base.
- Sprinkle remaining oat mixture on top.
- Bake for 35-40 minutes until golden brown.
- Cool before cutting into bars.
Notes
- Use fresh rhubarb for best results.
- Can substitute half the rhubarb with strawberries.
- Store in an airtight container for up to 3 days.
