Ingredients
- 3 medium beets, peeled and cubed
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups mixed greens
- 1/2 cup crumbled goat cheese
- 1/4 cup walnuts, chopped
- 2 tbsp balsamic vinegar
- 1 tbsp honey
Instructions
- Preheat oven to 400°F (200°C).
- Toss beets with olive oil, salt, and pepper.
- Roast beets for 30 minutes until tender.
- Let beets cool for 5 minutes.
- Arrange mixed greens on a plate.
- Top with roasted beets, goat cheese, and walnuts.
- Whisk balsamic vinegar and honey to make dressing.
- Drizzle dressing over salad and serve.
