Ingredients
- 1 medium butternut squash, peeled and cubed
- 3 tbsp unsalted butter
- 8-10 fresh sage leaves
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss butternut squash cubes with olive oil, salt, and pepper.
- Spread in a single layer on a baking sheet.
- Roast for 25-30 minutes until tender.
- Meanwhile, melt butter in a small saucepan over medium heat.
- Cook until butter turns golden brown and smells nutty (about 3 minutes).
- Add sage leaves and cook for 30 seconds.
- Toss roasted squash with the brown butter and sage.
- Serve warm.
