Description
A simple and flavorful side dish featuring roasted carrots and parsnips with a hint of herbs.
Ingredients
- 4 large carrots, peeled and cut into sticks
- 4 parsnips, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- Toss carrots and parsnips with olive oil, thyme, rosemary, salt, and pepper.
- Spread evenly on a baking sheet.
- Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
- Serve warm.
