Description

Ingredients

  • 4 large carrots, peeled and cut into sticks
  • 4 parsnips, peeled and cut into sticks
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss carrots and parsnips with olive oil, thyme, rosemary, salt, and pepper.
  3. Spread evenly on a baking sheet.
  4. Roast for 25-30 minutes, stirring halfway, until tender and lightly browned.
