Ingredients

  • 2 parsnips, peeled and chopped
  • 1 large sweet potato, peeled and chopped
  • 1 medium beet, peeled and chopped
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Preheat your oven to 400°F (200°C).
