Description
A simple and flavorful side dish featuring roasted root vegetables glazed with honey and fresh thyme.
Ingredients
- 2 large carrots, peeled and chopped
- 2 parsnips, peeled and chopped
- 1 large sweet potato, peeled and chopped
- 1 medium beet, peeled and chopped
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chopped vegetables with olive oil, honey, thyme, salt, and pepper.
- Spread the vegetables evenly on a baking sheet.
- Roast for 30-35 minutes, stirring halfway, until tender and caramelized.
- Serve warm as a side dish.
