Ingredients

  • 2 salmon fillets (6 oz each)
  • 1 cup white rice, cooked
  • 1/4 cup teriyaki sauce
  • 1 tbsp soy sauce
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 1/2 cup cucumber, sliced
  • 1/2 cup carrots, julienned
  • 1 green onion, chopped
  • 1 tsp sesame seeds


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Mix teriyaki sauce, soy sauce, honey, and sesame oil in a bowl.
  3. Brush half the sauce over salmon fillets.
  4. Bake salmon for 12-15 minutes until cooked through.
  5. Fluff cooked rice and divide between two bowls.
  6. Top rice with salmon, cucumber, carrots, and green onion.
  7. Drizzle remaining sauce over the bowls.
  8. Sprinkle sesame seeds before serving.
