Description

Ingredients
- 1 pound Brussels sprouts, halved
- 1 pound carrots, peeled and cut into sticks
- 1 pound sweet potatoes, peeled and cubed
- 1 red onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Toss all vegetables with olive oil, salt, pepper, thyme, and garlic powder.
- Spread evenly on a large sheet pan.
- Roast for 25-30 minutes, stirring halfway, until vegetables are tender and browned.
- Serve warm.
