Description
A hearty and flavorful dish combining spicy Italian sausage, creamy pumpkin, and cheese stuffed into pasta shells.
Ingredients
- 12 oz jumbo pasta shells
- 1 lb spicy Italian sausage
- 1 cup pumpkin puree
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- 1 tsp dried sage
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
Instructions
- Preheat oven to 375°F (190°C).
- Cook pasta shells according to package instructions, then drain and set aside.
- In a skillet, brown the sausage over medium heat until fully cooked. Drain excess fat.
- In a bowl, mix pumpkin puree, ricotta, Parmesan, egg, sage, salt, and pepper.
- Stir in the cooked sausage.
- Spread marinara sauce in the bottom of a baking dish.
- Fill each pasta shell with the sausage-pumpkin mixture and place in the dish.
- Top with mozzarella cheese.
- Bake for 25-30 minutes until cheese melts and turns golden.
- Let cool slightly before serving.
Notes
- Use mild sausage if you prefer less heat.
- Fresh sage can replace dried sage—use 1 tbsp chopped.
- Leftovers keep well in the fridge for up to 3 days.
