Ingredients
- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 3/4 cup cocoa powder
- 1/2 tsp salt
- 2 cups powdered sugar
- 1/4 cup butter, softened
- 2 tbsp milk
- 1/2 tsp peppermint extract
- Green food coloring (optional)
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F. Grease a 9×13-inch baking pan.
- Melt butter in a saucepan. Remove from heat and stir in sugar, eggs, and vanilla.
- Mix in flour, cocoa powder, and salt until smooth.
- Spread batter evenly in the pan. Bake for 25-30 minutes. Let cool.
- Beat powdered sugar, softened butter, milk, and peppermint extract until smooth. Add green food coloring if desired.
- Spread mint layer over cooled brownies.
- Melt chocolate chips and drizzle over the mint layer.
- Chill for 30 minutes before cutting into squares.
Notes
- For a stronger mint flavor, increase peppermint extract to 1 tsp.
- Store in an airtight container for up to 5 days.
- These brownies freeze well for up to 1 month.
