Description

A simple and delicious sticky toffee pudding recipe that’s easy to make.


Ingredients

  • 200g dates, chopped
  • 250ml boiling water
  • 1 tsp baking soda
  • 85g butter, softened
  • 140g dark brown sugar
  • 2 eggs
  • 175g self-raising flour
  • 1 tsp vanilla extract
  • For the sauce: 100g butter, 100g dark brown sugar, 150ml double cream


Instructions

  1. Preheat oven to 180C/160C fan/gas 4.
  2. Soak dates in boiling water with baking soda for 10 minutes.
  3. Cream butter and sugar together until fluffy.
  4. Beat in eggs one at a time.
  5. Fold in flour and vanilla, then mix in the date mixture.
  6. Pour into a greased baking dish and bake for 35-40 minutes.
  7. Make the sauce by melting butter, sugar and cream together in a pan.
  8. Pour sauce over the pudding and serve warm.

Notes

  • Serve with vanilla ice cream or custard.
  • Can be made ahead and reheated.
  • Keeps for 2-3 days in the fridge.
