Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter, cubed
  • 1 cup mashed sweet potatoes, cooled
  • 1/3 cup milk


Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Mix in mashed sweet potatoes and milk until a soft dough forms.
  5. Turn dough onto a floured surface and knead lightly.
  6. Roll out to 1/2-inch thickness and cut into rounds with a biscuit cutter.
  7. Place biscuits on a baking sheet and bake for 12-15 minutes or until golden brown.
