Ingredients
- 3 large sweet potatoes, peeled and cubed
- 1/4 cup brown sugar (or maple syrup for vegan)
- 1/4 cup milk (or almond milk for vegan)
- 2 tbsp butter (or coconut oil for vegan)
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
- 1/2 cup chopped pecans (optional)
- 1/4 cup marshmallows (optional, omit for vegan)
Instructions
- Preheat oven to 375°F (190°C).
- Boil sweet potatoes until tender, about 15-20 minutes. Drain and mash.
- Mix mashed sweet potatoes with brown sugar, milk, butter, vanilla, cinnamon, nutmeg, and salt.
- Transfer mixture to a greased baking dish.
- Sprinkle pecans and marshmallows on top (if using).
- Bake for 20-25 minutes or until golden brown.
- Let cool slightly before serving.
