Ingredients

  • 3 large sweet potatoes, peeled and cubed
  • 1/4 cup brown sugar (or maple syrup for vegan)
  • 1/4 cup milk (or almond milk for vegan)
  • 2 tbsp butter (or coconut oil for vegan)
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1/2 cup chopped pecans (optional)
  • 1/4 cup marshmallows (optional, omit for vegan)


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Boil sweet potatoes until tender, about 15-20 minutes. Drain and mash.
  3. Mix mashed sweet potatoes with brown sugar, milk, butter, vanilla, cinnamon, nutmeg, and salt.
  4. Transfer mixture to a greased baking dish.
