Description

Tender Pineapple Pork in a Slow Cooker is a delicious and easy-to-make dish that combines juicy pork with the sweet and tangy flavor of pineapple.


Ingredients

  • 2 lbs pork shoulder, cut into chunks
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup pineapple juice
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp ginger, grated
  • 1 tbsp cornstarch (optional, for thickening)


Instructions

  1. Place pork chunks in the slow cooker.
  2. Add pineapple chunks, pineapple juice, soy sauce, brown sugar, garlic, and ginger.
  3. Stir to combine all ingredients.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  5. If desired, mix cornstarch with a little water and stir into the sauce to thicken during the last 30 minutes of cooking.
  6. Serve hot with rice or your favorite side.

Notes

  • For extra flavor, marinate the pork in the sauce for 1 hour before cooking.
  • You can use fresh or canned pineapple, but drain canned pineapple before using.
