Description

A hearty and flavorful vegetarian chili made with three types of beans and no turkey. Perfect for a healthy meal.


Ingredients

  • 1 can black beans (15 oz)
  • 1 can kidney beans (15 oz)
  • 1 can pinto beans (15 oz)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes (14 oz)
  • 2 tbsp tomato paste
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt to taste
  • Pepper to taste


Instructions

  1. Heat oil in a large pot over medium heat.
  2. Add onion, garlic, and bell pepper. Cook until soft.
  3. Stir in tomato paste, chili powder, cumin, and paprika.
  4. Add diced tomatoes, beans, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper.
  7. Serve hot.

Notes

  • You can add corn or zucchini for extra vegetables.
  • Top with avocado or shredded cheese if desired.
