A hearty and flavorful vegetarian chili made with three types of beans and no turkey. Perfect for a healthy meal.
Ingredients
- 1 can black beans (15 oz)
- 1 can kidney beans (15 oz)
- 1 can pinto beans (15 oz)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can diced tomatoes (14 oz)
- 2 tbsp tomato paste
- 2 cups vegetable broth
- 2 tbsp chili powder
- 1 tsp cumin
- 1 tsp paprika
- Salt to taste
- Pepper to taste
Instructions
- Heat oil in a large pot over medium heat.
- Add onion, garlic, and bell pepper. Cook until soft.
- Stir in tomato paste, chili powder, cumin, and paprika.
- Add diced tomatoes, beans, and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper.
- Serve hot.
Notes
- You can add corn or zucchini for extra vegetables.
- Top with avocado or shredded cheese if desired.
- Store leftovers in the fridge for up to 3 days.
