A nutritious and delicious breakfast loaf packed with zucchini and carrots, perfect for toddlers.
Ingredients
- 1 cup grated zucchini
- 1 cup grated carrots
- 1 1/2 cups whole wheat flour
- 1/2 cup oats
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 cup honey
- 1/4 cup olive oil
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, mix zucchini, carrots, flour, oats, baking powder, and cinnamon.
- In another bowl, whisk honey, olive oil, eggs, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the loaf pan. Bake for 45-50 minutes.
- Let cool before slicing.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze slices for quick breakfasts.
- Substitute honey with maple syrup if desired.
