Description

Ingredients

  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 1/2 cups whole wheat flour
  • 1/2 cup oats
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/4 cup honey
  • 1/4 cup olive oil
  • 2 eggs
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, mix zucchini, carrots, flour, oats, baking powder, and cinnamon.
  3. In another bowl, whisk honey, olive oil, eggs, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the loaf pan. Bake for 45-50 minutes.
  6. Let cool before slicing.
