Description
A simple and comforting tomato-rice soup that’s easy to make with basic pantry ingredients.
Ingredients
- 2 tbsp olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1/2 cup white rice
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic. Sauté for 3 minutes.
- Stir in diced tomatoes, broth, rice, basil, salt, and pepper.
- Bring to a boil, then reduce heat to low.
- Cover and simmer for 20 minutes until rice is tender.
- Garnish with fresh parsley before serving.
Notes
- Use brown rice for a healthier option (adjust cooking time).
- Add a pinch of red pepper flakes for heat.
- Store leftovers in the fridge for up to 3 days.
