Ingredients
- 2 cups turkey leftovers, shredded
- 4 cups chicken or turkey broth
- 2 packs ramen noodles (seasoning packets optional)
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 clove garlic, minced
- 1 green onion, sliced
- 1 soft-boiled egg (optional)
- 1/2 cup spinach or bok choy
Instructions
- Heat broth in a pot over medium heat.
- Add shredded turkey, soy sauce, sesame oil, and garlic. Simmer for 5 minutes.
- Cook ramen noodles separately according to package instructions. Drain.
- Divide noodles between two bowls. Pour hot broth and turkey over noodles.
- Top with spinach or bok choy, green onions, and a soft-boiled egg if desired.
- Serve immediately.
