Description
A creamy and hearty vegan soup made with broccoli and potatoes. Perfect for cold days or a light meal.
Ingredients
- 2 cups broccoli florets
- 2 medium potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup coconut milk
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced potatoes and vegetable broth. Bring to a boil.
- Reduce heat, cover, and simmer for 15 minutes.
- Add broccoli florets and cook for another 5 minutes.
- Blend the soup until smooth using an immersion blender.
- Stir in coconut milk, salt, and pepper.
- Serve warm.
Notes
- For extra flavor, add a pinch of nutmeg.
- Store leftovers in an airtight container for up to 3 days.
