Description

A creamy and hearty vegan soup made with broccoli and potatoes. Perfect for cold days or a light meal.


Ingredients

  • 2 cups broccoli florets
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and garlic, sauté until soft.
  3. Add diced potatoes and vegetable broth. Bring to a boil.
  4. Reduce heat, cover, and simmer for 15 minutes.
  5. Add broccoli florets and cook for another 5 minutes.
  6. Blend the soup until smooth using an immersion blender.
  7. Stir in coconut milk, salt, and pepper.
  8. Serve warm.

Notes

  • For extra flavor, add a pinch of nutmeg.
