Ingredients
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until fragrant.
- Add carrots and potatoes, stir for 2 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes or until vegetables are tender.
- Season with salt, pepper, and cumin.
- Blend until smooth or leave chunky if preferred.
- Serve warm.
