Ingredients

  • 2 cups butternut squash, cubed
  • 8 oz pasta of your choice
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup vegetable broth
  • 1/2 cup coconut milk
  • 1 tsp dried sage
  • Salt and pepper to taste
  • 2 tbsp nutritional yeast (optional)


Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
  3. Add butternut squash and cook for 5 minutes.
  4. Pour in vegetable broth and coconut milk. Simmer until squash is tender.
  5. Blend the mixture until smooth. Stir in sage, salt, pepper, and nutritional yeast.
  6. Toss the sauce with cooked pasta and serve warm.
