Ingredients
- 2 cups butternut squash, cubed
- 8 oz pasta of your choice
- 1 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup vegetable broth
- 1/2 cup coconut milk
- 1 tsp dried sage
- Salt and pepper to taste
- 2 tbsp nutritional yeast (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add butternut squash and cook for 5 minutes.
- Pour in vegetable broth and coconut milk. Simmer until squash is tender.
- Blend the mixture until smooth. Stir in sage, salt, pepper, and nutritional yeast.
- Toss the sauce with cooked pasta and serve warm.
