Description

A creamy vegan mac and cheese packed with protein for a healthy twist on a classic comfort dish.


Ingredients

  • 8 oz elbow macaroni
  • 1 cup raw cashews, soaked
  • 1/2 cup nutritional yeast
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp turmeric
  • 1/2 tsp salt
  • 1 cup unsweetened almond milk
  • 1/2 cup cooked chickpeas


Instructions

  1. Cook macaroni according to package instructions. Drain and set aside.
  2. Blend soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, salt, almond milk, and chickpeas until smooth.
  3. Pour the sauce over cooked macaroni and stir well.
  4. Heat on low for 5 minutes, stirring occasionally.
  5. Serve hot.

Notes

  • Soak cashews for at least 2 hours or boil for 10 minutes for a smoother sauce.
  • Add more almond milk if the sauce is too thick.
  • Top with breadcrumbs or vegan cheese for extra texture.
