A creamy vegan mac and cheese packed with protein for a healthy twist on a classic comfort dish.
Ingredients
- 8 oz elbow macaroni
- 1 cup raw cashews, soaked
- 1/2 cup nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp turmeric
- 1/2 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup cooked chickpeas
Instructions
- Cook macaroni according to package instructions. Drain and set aside.
- Blend soaked cashews, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, salt, almond milk, and chickpeas until smooth.
- Pour the sauce over cooked macaroni and stir well.
- Heat on low for 5 minutes, stirring occasionally.
- Serve hot.
Notes
- Soak cashews for at least 2 hours or boil for 10 minutes for a smoother sauce.
- Add more almond milk if the sauce is too thick.
- Top with breadcrumbs or vegan cheese for extra texture.
