Description
A creamy and delicious vegan mac and cheese made with plant-based ingredients.
Ingredients
- 2 cups elbow macaroni
- 1 cup raw cashews (soaked)
- 1 cup water
- 1/4 cup nutritional yeast
- 1 tbsp lemon juice
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp turmeric
- 1/4 tsp paprika
Instructions
- Cook macaroni according to package instructions.
- Drain soaked cashews and blend with water until smooth.
- Add nutritional yeast, lemon juice, garlic powder, onion powder, salt, turmeric, and paprika to the blender. Blend until creamy.
- Pour sauce over cooked macaroni and stir well.
- Serve warm.
Notes
- Soak cashews for at least 2 hours for a smoother sauce.
- Adjust seasoning to taste.
- Store leftovers in the fridge for up to 3 days.
